Butter Tarts

Butter Tarts are considered one of only a few recipes of genuinely Canadian origin. The earliest published Canadian recipe is from Barrie, Ontario dating back to 1900 and can be found in The Women’s Auxiliary of the Royal Victoria Hospital Cookbook.

Recipe:


While there are many recipes to be found online, I find many of them to be too fancy, I think simple is best for butter tarts, I don't even like raisins or walnuts in mine.  I've had this recipe for years and years, I do not know the original source.


Step 1:
Combine all the ingredients in a large bowl:
  • 2 eggs, lightly beaten
  • 1C corn syrup
  • 1C sugar
  • 1/4C melted butter
  • 1t vanilla

Step 2:
Pour filling into 24 frozen tart shells (or feel free to make your own) - 1/3 full

Step 3:
Bake at 350 for 20-25 minutes.

As I said, these are my favourites!  I've bought many a butter tart in the store or at markets and many of them just don't do it for me.  These ones are gooey, soft and above all, tasty!  Kiddos love them too, and there's nothing for sticky fingers to pick out of them (but feel free to add raisins, walnuts, pecans, etc.. if that works for you).

  1. So, here's a question for you.....the corn syrup that we use in recipes like this - is it the "high fructose corn syrup" that we are supposed to be avoiding or is it something different?

  2. Not the same thing - Corn syrup is distinct from high-fructose corn syrup (HFCS), which is created when corn syrup undergoes enzymatic processing, producing a sweeter compound that contains higher levels of fructose.

  8. I LOVE butter tarts and I've been trying to find one that uses corn syrup. I have dark corn syrup. Will that work?
