Loaded Potato & Buffalo Chicken Casserole

This recipe is a find from my neighbour, and I was so happy she shared it with me.  When I think casserole, I don't usually think about having a roasted potato base, but this was a great idea and you could make many variations to keep it fresh.

The recipe comes from Cook Lisa Cook - I followed this one but she also has a slimmed down version of this tasty recipe.

Our Changes:

 


Though the recipe specifically says to put the raw chicken pieces on top of the roasted potatoes, I thought that was a little icky, so I cooked it first.  This worked out as I set aside some of the cooked chicken for the boys in case they didn't like the hot sauce.

Family Thoughts:

 



Hubby and I loved it, we had it with bread and sour cream on the side.  The boys thought it was too spicy, but they aren't really into hot sauce anyways.  I would love even just the roasted potatoes with this sauce as a side dish.  This was a great find and a great change from what I consider to be casseroles.

    I also found putting the raw chicken on the potatoes a bit strange - I would have made the same change you did.
    What kind of hot sauce did you use?
