Mac & Cheese with Velveeta

I LOVE Mac & Cheese, especially homemade, this is my recipe and love to make it on a weekend.

  • 1/2-3/4 bag of pasta like small shells or macaroni
  • 1/2C butter
  • 1/2C flour
  • approx 3C milk
  •  1 pkg of velveeta, cubed
  • 1C shredded cheese
  • 1/2t mustard powder
  • fresh black pepper to taste
  • 1/2C italian bread crumbs
  • 2T butter

Make your own italian bread crumbs..

  • 1/2C plain bread crumbs
  • 1t garlic powder
  • 1t parsley
  • 1/2t oregano
  • 1/2t italian seasoning

Step 1:
Cook the pasta until just done, drain and add to a buttered casserole dish.

Step 2:

In a medium sauce pot melt the 1/2C butter, add flour and mix, let it bubble for a minute then slowly add the milk while stirring.  Once the milk has thickened add the mustard powder, fresh black pepper and slowly add the velveeta.  When velveeta has completed melted pour over the pasta, mix well, top with shredded cheese.

Step 3:

Melt the 2T butter in the microwave, stir in the bread crumbs, spread on top of the shredded cheese.

Step 4:
Bake at 350 for 15-20 minutes until the sides are bubbling.

Family Thoughts

This is a family favourite, kids love it and so do adults.  The mustard powder adds a really nice flavour that I think makes all the difference.  Makes great leftovers too!
