6 Week Raisin Bran Muffin Mix

Does your family enjoy fresh muffins? Mine sure does. This muffin recipe is a favourite of ours. I especially love it because it gives us fresh muffins in 20 minutes for weeks on end!

6 week Raisin Bran Muffins Mix


Step 1:
Combine the following ingredients in a large bowl:
  • 5 1/2 cups flour
  • 2 1/2 cups sugar
  • 3 cups natural wheat bran
  • 2 cups All Bran cereal
Step 2:
Combine the ingredients below in another large bowl:
  • 3 Tbsp baking soda
  • 4 cups buttermilk (1 litre)
  • 1 1/2 cup oil
  • 4 eggs
  • 1/2 cup moasses
  • 2 cups raisins

Step 3:
Add the wet to the dry ingredients and stir just to combine.

Step 4:
Bake at 375 degrees for 20 minutes or until toothpick comes out clean.

The raw muffin mix keeps in the fridge, covered for up to 6-8 weeks!

Now it is super easy to make muffins in the morning! Scoop them out and bake! Voila! Fresh muffins.

Family Thoughts

As a busy Mom, I love things that save me time.

My children LOVE muffins and muffins are currently my son's preferred breakfast food. However, some mornings are rather hectic and we are short on time. I absolutely LOVE this muffin recipe because it is so moist and yummy. But most of all, I love it because it makes giving my children fresh muffins so easy!

Did I mention that my kids love muffins? They really love these ones, to the point that I have to limit how many I make in a batch because, well....they are full of bran goodness.

    Be sure to use two BIG bowls as it makes a tonne!
    Also, although my mom always says not to substitute the buttermilk with milk and vinegar, I have made these muffins using both and they were yummy both times!!!!

      We have one BIG honkin' bowl that we use and it all fits - but we have also put into large tupperware containers too.

      I often buy buttermilk just to make this, but I too have made it with the substitution just fine!

      BTW anon - who on earth could YOU be?! LOL

  5. I will have to try this the next time my niece & nephew come to stay. They are up way too early and the first thing they want is breakfast. However, their mother has them on a fairly "healthy" diet and having the right cereals, yogurts etc. has been a challenge in the past. They would love these and their mother will be happy they had (raisin) bran muffins!
