Roasted Veggies

I find the best way to get kids interested in veggies around here is to roast them.


  • 1-2C chopped veggies, we did broccoli, also works great with cauliflower, carrots, kale and more
  • approx 2T extra virgin olive oil
  • couple dashes of kosher salt
  • sometimes I add 1/2t of garlic powder

Step 1:
Wash and chop your veggies, then I find it easiest to throw them in a ziplock bag

Step 2:
Add the oil and seasoning to the bag, close and toss it around to coat the veggies

Step 3:
Pour onto a cookie sheet, bake at 450 for approx 10 minutes, flipping half way through.  Serve hot.

Family Thoughts:

Everyone likes the taste and it's a good way to get kids to enjoy veggies without having to hide them.

  4. I've never tried roasting veg, except for parsnips - they are really delicious roasted. I'll have to try roasting broccoli too now.
