I love making dessert type breads because they tend to freeze really well and a slice makes an excellent addition to a school lunch.
Banana Blueberry Oat Bread


- 1/4 cup butter, softened
- 1/2 cup brown sugar
- 3 Tablespoons honey
- 1 teaspoon vanilla
- 1/2 cup plain yogurt or sour cream (I like to use greek yogurt for added protein)
- 1 banana, mashed
- 1 1/2 cups whole wheat flour
- 1/2 cup quick oats
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 Tablespoon cornstarch
- 1 teaspoon cinnamon
- 1/3 cup milk
- 1 cup frozen blueberries, washed and drained
Directions:
Step 1:
Preheat oven to 350℉.
Step 2:
Grease loaf pan and set aside.
Step 3:
With an electric mixer, mix the butter and sugar for a few minutes, until creamy.
Add honey, vanilla, yogurt and banana and cream well.
Step 4:
In a medium sized bowl, mix together dry ingredients.
Step 5:
Add the dry mixture alternately with the milk into the creamed mixture, mixing together in between. End with dry ingredients.
Step 6:
Gently mix in the blueberries.
Step 7:
Bake for approximately 1 hour, until toothpick inserted comes out clean.
I think my son would love this recipe! I'm going to give it a try.
