Moving and EASY Meals - Broccoli & Cheese Soup in the Crockpot

Well it’s Day 2, and to be honest, I sort of panicked this morning as we have to walk the dog and then head out to a play date that usually lasts most of the day! First of all, how on earth would I have time to get a crockpot meal together and second of all, I didn’t even have an idea yet!

Before I get to tonight’s meal, I should report on last night’s Salsa Chicken. It too was a REALLY easy meal to prep. My DH gave it a 10/10 and I gave it about an 8/10. It was good, but it wasn’t as flavourful as I thought. It could have been the salsa I added or that I ‘may’ have messed up and put the crockpot on low instead of high and then changed it and cooked it longer…ooops. I put the chicken in spinach tortilla wraps with some cheddar cheese and olives. Some sour cream and lettuce would have likely added the needed ‘umph’.

As soon as my LO was down for her nap, I quickly jumped on Pinterest while sipping my morning coffee (ok…I made time for that). I wasn’t having any luck finding something that my stomach was saying ‘YES’ to and so I decided to look up crockpot soups. My DH LOVES soup and I came across a recipe for Broccoli Cheese Soup and liked what I saw. My DH does love soup but he isn’t a fan of cheese (don’t tell him I said that because ever since we have had our LO there’s a new rule in the house – no saying you don’t like something!). I liked how I had all of the ingredients for the soup and that the cheese was an add on after! Some for me and none for the DH! Perfect!!!

So in about 10 minutes (literally), I put together the meal with very little clean up! I added three mushrooms that I had left over from earlier in the week and as I only had one can of evaporated milk, I added a can of milk using the soup can and another can of milk using the evaporated milk can in order to stick to the amount of liquid that the recipe calls for…it may be too runny but we’ll just have to see.

So, the LO is still napping, dinner is ready and I can head out to walk the dog and play as soon as she wakes! Let’s hope it tastes good!

  3. I wish I had seen this yesterday. I was frozen and craving soup, but was so not in the mood for a big clean up. It was definitely the perfect day to make it in the morning, have some for lunch, snack on it and call it dinner!
