Moving and Easy Meals: Slow Cooker Mac and Cheese

Feel free to get caught up on Alison's week long adventure with preparing dinners ONLY with her crockpot in hopes to make easy meals in her almost empty kitchen before she moves.
Day 1: Salsa Chicken
Day 2: Broccoli and Cheese Soup
Day 3: Pizza in the Crockpot
Day 4: Pork Tenderloin in the Crockpot

I cannot believe that this is Day 5!!! Where has the time gone? Our kitchen is nearly all packed up and I am getting so excited to start organizing in our new house!

Last night’s pork recipe got a 7/10 rating. While it was SUPER easy and fast, I didn’t love the wine flavor (and just to be clear I do LOVE wine) and the meat was a little bit dry. My husband liked it more than I did. I think I’ll stick to the BBQ Pulled Pork recipe that I’ve tried time and again.

To be honest, I almost gave up for tonight as I’m tired and want to completely pack everything in the house and have it done – including the crockpot!!! But…I decided to head back to the site where I got the pizza idea as we liked it so much…maybe they would have something super easy and good once more. Tonight, we will give Slow Cooker Mac and Cheese a try. I particularly like the idea of not having to cook the pasta as our pots are now packed!

With only two more days to go before the big move, I think I may call it quits with this Mac n’ Cheese meal and resort to take-out. I think I did pretty well sticking to a full working week of crockpot meals! Thanks for coming along with me on this challenge and I still hope to hear your ideas and recipes for the future.

  1. Mac & Cheese in the slow cooker sounds like a good idea, have never thought about doing it in there.

  2. I tried this once but it didn't turn out, it went like a big glob of mush. Yet everyone talks about how good it is, maybe I'll try it one more time

  3. I tried it in the slow cooker too and it also didn't turn out.. I make my mac and cheese on the stove and oven.
