Moving and EASY Meals - Salsa Chicken

It is with great excitement that we prepare for our first move as a family!!! Being on maternity leave is a great time as I have had the opportunity to pack during naps (we are blessed with a great sleeper – although it didn’t start out that way!). We are SEVEN days away from the big move and I want to pack as much up as I can now so that we are ready to go on move day.

In the next seven days I plan to only use my crockpot for making meals (dinner) as then I do not need to keep all my other kitchen gadgets out. I am therefore seeking out easy recipes (as healthy as possible) that require very little measuring and preparation.

Tonight I am using a recipe called Salsa Chicken that I found on Pintrest in which it instructed me to throw in 4-6 chicken breasts with a jar of salsa and a packet of Taco seasoning – can’t get any easier than that right!?! Stay tuned.

  1. Home made beans in the crock pot are awesome. You need a pack of Navy beans (can be found at walmart). Soak them over night (8hrs), come morning pick out any bad ones and then boil them for 30 minutes. Pour them into the crock pot. Add 1 1/2 cups ketchup, 1/2 cup molasses, 1/2 cup brown sugar, 1-2 chopped onions, a tablespoon of mustard, pound of bacon cut in pieces. Toss in all those ingredients and set the cooker to high for 6-8 hours. They turn out DELICOUS! Good luck on the move. Let me know if you try the beans out. ( You can get at least 2 or more meals out of the beans and great for breakfast too )

    1. OH, thank you for posting this recipe. I was wondering how to do beans in the crockpot! You posted a recipe I can try now. I love salsa chicken, but not my children unfortunately. Thank you again!
