One Pot Oatmeal Slab Cookies

Growing up, my Mom used to make a version of this recipe on a somewhat regular basis. Because the recipe is so simple, it was one of the very first recipes that I tried out when I was on my own!

1 Pot Oatmeal Slab Cookies

1 Pot Slab Cookies

Ingredients:
  • 3/4 cup butter
  • 3/4 cup brown sugar
  • 1 tsp vanilla
  • 1/2 cup all purpose flour
  • 1/2 cup whole wheat flour
  • 1 cup oatmeal (large flakes)
  • 1 1/2 tsp baking soda
  • optional topping of chocolate chips, nuts, smarties, m&ms
Note: Just like any recipe, you can make these using just all purpose flour.

Directions:

Step 1:
Preheat oven to 350℉

Step 2:
Melt butter, brown sugar and vanilla together over low heat in a medium to large sized pot.

Step 3:
Add flour, oatmeal and baking soda and stir until mixed well.

Step 4:
Pour mixture into a greased cookie sheet and press down.
You don't have to use the entire cookie sheet, simply shape the slab into whatever size you like.
If you are using an optional topping, now is when to press it into the top.

Note: I use a large stoneware Pampered chef bar pan that requires no grease and they don't stick!

Step 5:
Bake for approximately 10-15 minutes or until top is brown.

Family Thoughts

My only "thought" for you on this is to hide them! They disappear way too fast! They are a great peanut free addition as a treat in a school lunch too. If you're smart, you may freeze a few individual portions as soon as they are cooled for this purpose.
