Stuffed Peppers

My hubby loves cabbage rolls and stuffed peppers, I'm not too big on the cabbage, but stuffed peppers is something the whole family can agree upon.

  • 6-8 peppers
  • approx 1lb ground beef
  • approx 1C of minute rice
  • 2T Worcestershire sauce
  • 1 can tomato juice
  • salt and pepper to taste

Step 1

Cut the tops off the peppers and hollow them out, put them in a deep casserole dish

Step 2

In a bowl mix together ground beef, rice, Worcestershire sauce, salt and pepper and about 1/3 of the can of tomato juice

Step 3

Loosely pack the meat mixture into the peppers

Step 4

Cover the peppers with the remaining tomato juice

Step 5
Cover with foil and bake at 350 for 2 hours, baste the peppers a few times during the 2 hours with the tomato sauce in your dish

Family Thoughts

Hubby loves these the most, I enjoy them too, kids like to eat out the middle and pick at the peppers, it makes a good family meal.  It also make great leftovers and a simple dish to serve to a crowd!

  1. These look really good. A bit different than the stuffed peppers I'm used to having. We use marinara in ours. I'm going to try it this way! (Rafflecopter -

  2. It's usually my son who makes these for us - now he's moved out I'll have to make them myself :-( Thanks for the recipe, at least I could make them now.

  3. I love stuffed peppers, not my husband so much I have to be careful when I make them for him because he likes his peppers stiff crispy
