Fried Potatoes

Whenever I'm baking potatoes I always throw in an extra few to make fried potatoes the next day. Great for either breakfast or a side at dinner.

Recipe - Fried Potatoes


Ingredients
  • approx 2 large potatoes
  • 1 onion, chopped
  • salt & pepper to taste
  • vegetable oil
  • chopped bacon (optional)

Step 1
Bake potatoes washed and wrapped in tin foil either earlier in the day or the night before.  Best use of your time is to make baked potatoes for dinner the night before and these are your leftovers

Step 2
Roughly slice up potatoes, up to you how chunky you want them

Step 3
Add vegetable oil to a fry pan and heat med-high

Step 4
Add potatoes, onions, salt & pepper (and bacon if you want) to pan and heat through, onions should be soft

Step 5
Serve hot on their own as a side dish (we like it topped with sour cream) or along side bacon/sausage for breakfast.

A great way to use left overs, everyone in my family loves fried potatoes the next day!

  1. I used to always bake my potatoes first, but now just use the raw and do the same thing. I've also been cooking the bacon in the pan at the same time as the potatoes! YUM!!
