Pumpkin Brownies (without the Chocolate)

I've made Apple Brownies before so why not try out Pumpkin Brownies? These have a similar consistency to a traditional brownie, but they are slightly less dense and have no chocolate in them. We are chocolate fans here too, but trust me, the chocolate will NOT be missed in this delicious treat.

These are moist, chewy pumpkin brownies, but without the chocolate!

Prep Time: 10 minutes
Cook time: Approximately 20-25 minutes
Yield: Approximately 16 brownies

Ingredients:
  • 1/2 cup butter, room temperature
  • 1 cup sugar
  • 1 teaspoon ground cinnamon
  • 1 egg
  • 1/2 cup pumpkin puree
  • 1 tsp vanilla
  • 3/4 cup all-purpose flour

Instructions:
  1. Preheat oven to 350°F. Lightly grease an 8x8 square pan; set aside.
  2. Cream together butter and sugar with a mixer.
  3. Add all other ingredients except the flour (cinnamon, egg, pumpkin, vanilla) and mix together well.
  4. Stir in flour.
  5. Bake for approximately 25 minutes or until edges are lightly browned and toothpick comes out clean in the middle.

Family Thoughts:

There is not much to say here other than the fact that these are a sinfully delicious fall treat!

  4. If I wanted these to be less sweet do you think I could get away with only doing 1/2 cup of sugar and then adding some semi-sweet chips? Or will that alter the recipe too much?

    1. Yes I think that would definitely work! I've made the recipe with 3/4 cup of sugar with no change!

  6. These are SO good! I kicked my second batch up a notch by swirling pumpkin spice cream cheese in with batter after putting it in my pan. I used one tub of the cream cheese, room temp and whipped it with one egg... it turned out great! Thanks!!
