Roasted Sausage

With the cold weather just around the corner I know some of us put the bbq to rest over the winter (I know some of you use it rain, snow or shine too!) and I hate trying to cook sausage in a fry pan, it splatters everywhere, so I wanted to share the way I roast sausages in the oven, it can then be used in so many meals!

Recipe - Roasted Sausage

  • 4-8 sausages, we love oktoberfest sausage
  • 1 large onion, sliced
  • 1-2 sweet peppers, seeds removed and slices

Step 1
Add your frozen sasuages to a roasting pan

Step 2
surround sausages with sliced onions and peppers

Step 3
Heat in the oven at 400 for approx. 40 minutes until sausages are cooked through ad onions and peppers are soft

Step 4
At this point you could be done, serve sausages on a bun, top with onions and peppers - it's delicious

Step 5
Sometimes I go a step further, cut up the sausages, put them back in the pan, drizzle with a little extra virgin olive oil and put it in the oven for another 10 minutes while I boil some pasta.  Serve a scoop over top of some cooked pasta, it tastes fantastic

Family Thoughts 

We love this dish both ways, or change it up again and serve over rice, mashed potatoes or along side roasted potatoes.  A very easy to make dish that takes little prep time and tastes great!  The whole family enjoys this, the kids love it when we have it with pasta best.


  1. I'm not a big sausage eater but this on top of pasta sounds delicious, I'd need a little sauce of some description so I'd probably add a bit of cream to the juices towards the end.
