Berry Punch

If you attended our recent twitter party for #CdnMomsCook you might have caught me sharing my Berry Punch recipe, but if not, or if you need a refresher, here it is..

Recipe - Berry Punch


Ingredients
  • 1 can of frozen berry punch (do not add water)
  • 2L gingerale
  • 1/2 bag of frozen raspberries
  • 1/2 bag of frozen blueberries
  • 1/2 container of rainbow sherbet

Step 1
Mix together the first 4 ingredients in a punch bowl, stir slowly as you don't want the gingerale to go flat

Step 2
Top with scoops of rainbow sherbet and leave it to melt for at least 10 minutes before serving

You can add some ice cubes to the punch to keep it cold, but not too many or you will water it down.  The frozen berries help keep it cold as well.

Everyone loves this punch, it's the rainbow sherbet that really makes it.  Not only with its unique taste but also the frothy element makes it a fun drink for everyone and looks great in a punch bowl!

Garlic Cheese Biscuits

An update on our Bisquick Cheese Buns, I'm making them a new way so they are even better! This recipe will give you a bigger, fluffier and more biscuit like texture. If you are looking for one softer and doughy refer to the original recipe.

Recipe - Garlic Cheese Biscuits


Ingredients
  • 1 1/4C Bisquick
  • 1/2C milk
  • 1/2C shredded cheese
  • 1t dried oregano
  • 2T butter
  • dash of garlic powder
  • dash of parsley flakes


Step 1:
Mix together the bisquick and milk, it will be a little lumpy, that's fine

Step 2:
Mix in the cheese and oregano

Step 3:
Drop spoon fulls onto a cookie sheet covered in parcement paper

Step 4:
Bake at 375 for 10-12 minutes - the buns don't get brown on the top, check for browning around the edges of the bottom

Step 5:
When the buns come out of the oven melt butter in the microwave, add garlic powder and parsley, spread on top of buns, pop back in the oven for 1-2 minutes.

Step 6:
Remove from oven, serve and enjoy!

How to turn store bought spaghetti sauce into a fantastic meat sauce

We do love homemade meat sauce, but sometimes spaghetti gets decided on at the last minute and there's not always sauce in the freezer.  Here's a few extra ingredients to turn store bought spaghetti sauce into a fantastic meat sauce!

Recipe - How to turn store bought spaghetti sauce into a fantastic meat sauce

Ingredients
  • approx 1lb ground beef
  • 2T worcestershire sauce
  • 1t garlic powder
  • 1t italian seasoning
  • 1/2t dried oregano
  • store bought spaghetti sauce

Step 1
Cook ground beef and drain - I buy club size packs of ground beef, cook and freeze in individual portions so I can just pull out a pack for this recipe, defrost and heat it in the pot

Step 2
Add worcestershire sauce to meat, season with garlic, italian seasoning and oregano

Step 3
Add store bought spaghetti sauce

Step 4
Let simmer on med-low for at least 20 minutes



Family Thoughts



Makes store bought spaghetti sauce taste fantastic, the improved taste is noticeable and easy to do! I serve over spaghetti noodles and I like to top with parmesan and red pepper flakes.

Tuesday Tips & Tricks: A Less Stinky Kitchen Garbage

Where we live, we have four types of waste: garbage, green bin, recycling and outdoor (home) compost.

Our system works like this:

Under the kitchen sink we have an indoor recycling bin, a lined green bin and a garbage.

In the garage we have four (count them 1,2,3,4) recycling bins, a green bin and a garbage bin.

The green bin tends to be the stinkiest one in the house, as it is where we put all of our food scraps (and disposible diapers when used). It typically gets emptied, tied up and tossed into the garage once a day (thank you hubby for often doing this job!), but there are times, especially in the warmer months, where the smell is still overwhelming. This is not a smell that you want in your kitchen!

So, we have a trick that has been working well for us!
  1. Sprinkle some baking soda into the bottom of the green bin.
  2. Fold up a couple of pieces of newspaper and line the bottom of the green bin.
  3. Green Bin
  4. Put a compostible bag liner inside the bin.
  5. Green Bin
  6. Enjoy a less stinky kitchen!

Crab Wontons

We love wontons! Fun for lunch, a perfect appetizer, and so many options to fill! Here is my recipe for Crab Wontons, stay tuned for even more wonton recipes.

Recipe - Crab Wontons


Ingredients
  • 1 package of wonton wrappers
  • 1 bunch of green onions, washed and chopped
  • 1 8oz brick of cream cheese, softened
  • 1 pkg of imitation crab meat, or 1 can of crab meat
  • Oil for frying

Step 1
If you are using a can of crab meat - drain and flake; if you are using imitation crab meat chop very finely. I actually did mine in the magic bullet as I was going for almost a paste, it worked out well.

Step 2
Mix together crab, cream cheese and green onions.
Alternative: For the kids I did a few with just cream cheese and onion and some with just cream cheese - all are delicious

Step 3
Start a 1-2cm of oil heating in your pan on medium heat

Step 4

Spread out wontons, put a small amount of filling in the middle of each. Do not over fill or they will not close for frying. Wet all for sides with water, fold into a triangle and bring the two corners together

Step 5
When oil is hot, drop 6-8 wontons in the oil at a time, it takes less than a minute on each side for the wontons to brown. When brown on all sides remove from oil and drain on paper towel.

Step 6
Serve hot, on their own or with any number of sauces - chili, sweet and sour, thai, plum

These can be made ahead of time and reheated in the oven, they will get a touch chewy when reheated

We loved them all!! So yummy, simple ingredients, easy to make, experiment with flavours!
