Have you ever felt like eating pancakes but you don't feel like standing in front of the stove pouring, flipping, cooking, repeat? This "cake for breakfast" is a giant pancake made in the oven.

Prep Time: 5 minutes
Cook time: Approximately 1 hour
Yield: Approximately 9-12 pieces

Ingredients:
  • 1 cup flour
  • 3/4 cup sugar
  • 2 tsps baking powder
  • 1/2 tsp cinnamon
  • 1 egg, beaten
  • 1/2 cup buttermilk
  • 1/3 cup sour cream
  • 3 Tbsp vegetable oil
  • 1 tsp vanilla
  • 1 cup chopped strawberries

Cake for Breakfast
Instructions:
  1. Preheat oven to 350°F. Line a square pan with parchment paper; set aside.
  2. Mix together dry ingredients (flour, sugar, baking powder, cinnamon).
  3. In another bowl, whisk together wet ingredients (egg, buttermilk, sour cream, oil and vanilla).
  4. Add wet to dry ingredients and gently mix just until combined (a few lumps are ok).
  5. Wash and cut strawberries into small pieces. Drain on paper towel to reduce moisture going into the cake. Gently fold in strawberries.
  6. Pour into pan and bake for approximately 1 hour (until the top is browned and a toothpick comes out almost clean).
  7. Cut into pieces and serve with maple syrup and fruit.

Family Thoughts:


I made this up at the cottage for a group of 10 people on Canada Day weekend. I doubled the recipe and it turned out really well. I baked it for approximately 1 hour and 15 minutes, so cooking times will vary. There were no left overs with this delicious breakfast! I will definitely be making pancakes in a CAKE again! It is SO much easier and just as yummy as pancakes.

Taco Nachos

A great solution to left over taco meat, a yummy late night snack and perfect for a party, you will love these Taco Nachos, trust me!

Recipe - Taco Nachos


Ingredients
  • approx 1/2lb ground beef
  • 1/2 pkg taco seasoning
  • 1 1/2C shredded cheese
  • nacho chips

Step 1
If you aren't using left over taco meat, brown ground beef, add taco seasoning and let simmer until absorbed

Step 2
Layer nacho chips, taco meat and cheese in a casserole dish

Step 3
Bake at 350 for approx 10 minutes

Step 4
Serve hot with sour cream and even some guacamole

These were delish!!! Everyone, even the kids, thoroughly enjoyed them!

Bacon Wrapped Peppers

I found some colourful peppers at the grocery store today and knew I had to do SOMETHING with them, so I decided to try this:

Recipe - Bacon Wrapped Peppers 


Ingredients 
  • approx 6 sweet baby peppers
  • 4oz of cream cheese
  • 6 strips of bacon (I used peppercorn bacon, any bacon will do)

Step 1
Wash peppers, slice them length wise in half, remove seeds

Step 2
Fill each pepper half with cream cheese

Step 3
Wrap half a slice of bacon around each pepper

Step 4
BBQ or bake at 400 for approx 30 minutes

We thought these were very tasty!  Would be great for a BBQ, a colourful addition to any table and a yummy appetizer or late night snack while sitting out on the deck!

Peanut Butter Chocolate Marshmallow Squares {a.k.a Church Windows}

This chocolate peanut butter mixture is truly delicious and beautiful too. The "Church Windows" name comes from the colourful marshmallows when you cut the squares. They look like stained glass, if you use your imagination.

Prep Time: 25 minutes (including cooling time)
Cook time: This is a NO bake recipe!
Yield: Approximately 25 squares

Ingredients:
  • 1 cup chocolate chips (we prefer milk chocolate)
  • 1/2 cup smooth peanut butter
  • 1 bag mini coloured marshmallows

Instructions:
  1. In a large pot, melt chocolate chips and peanut butter together until melted, mixed and shiny.
  2. Remove pot from heat and let cool for approximately 15 minutes.
  3. Line a 9x9 square pan with parchment paper.
  4. Add marshmallows to peanut butter and chocolate and stir to combine.
  5. Put mixture into pan, spreading evenly to the sides.
  6. Refrigerate until chocolate hardens (approximately 2 hours).

Family Thoughts:


These squares can get VERY soft if left out on the counter, so they are best stored in the fridge. They are very delicious, but somewhat rich. We brought these up to the cottage on Canada Day weekend and everyone kept asking for them at every meal.

This past week, I found myself asking the question of "how long can I keep this in the fridge before it goes bad" a lot so I went to good old Google and discovered a great website!


I am concerned about Food Safety all of the time, but I find during the summer months, due to the heat, I often question the safety of food more often.

Shanghai Noodles and Bok Choy

Today I wanted to share a couple Asian style dishes that can be a base or addition to all sorts of meals.

Recipe - Shanghai Noodles 



Ingredients
  • udon noodles
  • 2T hoisin sauce
  • 2T soy sauce
  • 1/2T sesame oil
  • 1/2t white sugar

Step 1
In a small bowl mix together hoisin sauce, soy sauce, sesame oil and sugar

Step 2
Boil your noodles for 3-5 minutes or add them to a stir fry (be sure to follow directions on packaging)

Step 3
Top noodles with sauce and serve



Recipe - Bok Choy



Ingredients
  • baby bok choy
  • vegetable oil
  • 2t sesame oil 
  • 2T water

Step 1
Wash bok choy and cut length wise

Step 2
Heat oil in your frying pan or wok

Step 3
Add book choy to pan, let it sear for a couple minutes, then add 2T water and cover to steam

Step 4
Remove lid, drizzle with sesame oil and serve




Next Steps 

 

Now that you know how to cook these 2 dishes you can do any number of things with them.

Cook shanghai noodles as noted above and serve as a side dish or first cook chicken, pork, beef or shrimp and add noodles and veggies to make a stir-fry.

Bok choy can be served as above for a side dish, or added to a stir-fry as well.  I love serving shanghai noodles and bok choy together.

Caesar

Invented in Calgary, Alberta in 1969 by restaurateur Walter Chell to celebrate the opening of a new Italian restaurant in the city, caesars are Canada's cocktail and I LOVE them!

Recipe - Caesar 


Ingredients
  • ice
  • 1 shot of Vodka (or leave it out and make it a mocktail, tastes just as good!)
  • 4 dashes Worcestershire sauce
  • 3 dashes hot sauce
  • salt & pepper (yes, really)
  • Clamato juice
  • lime wedge
  • celery salt or caesar rimmer
  • garnish - celery stalk, pickle, lime wedge are all tasty

Step 1:
run a lime wedge around the rim of the glass, then rim with the celery salt or caesar rimmer

Step 2:
fill a tall glass half way with ice

Step 3:
add vodka, Worcestershire sauce, hot sauce and salt and pepper

Step 4:
fill the glass with clamato juice, garnish and serve
 

Family Thoughts


Caesars are one of my favourite mixed drinks, you can't go wrong with ordering one, they always taste great.  I love finding a GREAT one in bars or restaraunts, I recently went to a place that made it's own rim, garnished with a pickle and a lime and it was AMAZING!  Easy to make at home and experiment with too.
