Recipe - Butterscotch Pie
Ingredients
- 4 egg yolks, lightly beaten
- 2C brown sugar
- 1/2C flour
- 2T butter
- 1T vanilla extract
- 3C milk
- Pinch of salt
Step 1
Add everything into a double boiler (make sure you remembered to seperate your eggs)
Step 2
Heat over med heat until thickened - stir constantly - will take a good 7-10 minutes
Step 3
Pour into 1 deep dish pre-cooked pie shell, or 2 regular pre-cooked pie shells
Step 4
At this point you could top with a meringue (using your left over egg whites) or leave plain
Step 5
bake at 350 degrees for 10-12 minutes
If you didn't top with meringue, I like to serve with whipped cream on top
Family Thoughts
We all love this pie, the kids, the adults - I could eat it right out of the pot, forget the pie shell! It's a light flavour, probably lighter than you are thinking right now - which makes is a wonderful afternoon treat with a cup of tea!
My mother always made this, I grew up knowing it as sugar pie.
