Cheddar Potato Soup

Growing up, I never used to like potato soup. It could be because it was often served in a chowder form, but regardless of the reason, I laugh now because when my hubby first made this soup, I told him that I wouldn't like it, but I would obviously give his a try. It smelled SO good as he made it and when he served it that night for dinner, I was honestly suprirsed with how good it was. Am I ever glad I tried his version! This soup is now my favourite soup, it definitely falls under the category of one of my staple comfort foods.

This soup is creamy, although it has no cream and is rich in a delicious way.

Prep time: 30 minutes
Cook time: 1 hour +
Yield: 1 large pot of soup

Ingredients:
  • 6 fist sized potatoes, peeled and cut into large pieces
  • 4 large carrots, peeled and cut into large pieces
  • 1 onion, diced
  • oil and/or butter
  • chicken stock
  • water
  • small amount of pepper, to taste
  • 1 stock of celery (optional)
  • cheddar cheese, shredded

Instructions:
  1. Dice one large onion (and celery, if using) and put in bottom of large stock pot with approximately 1 Tbsp of oil and/or butter. Cook over medium heat, stirring regularly until cooked (approximately 10 minutes).
  2. Wash, peel and cut potatoes and carrots into large pieces.
  3. Add carrots and potato to the pot and cover with water (approximately 4-6 cups).
  4. Add in stock cubes according to directions on box (we use 1 cube per 2 cups of water).
  5. Bring mixture to a boil and switch to a low simmer.
  6. Leave on a low simmer for at least an hour, but you can simmer it all day if you wish.
  7. Remove soup from heat source and let stand for a few minutes.
  8. Mix/blend soup together until smooth using an immersion hand blender or a stand blender.
  9. Serve soup with a small handful of shredded cheddar cheese in each bowl that can be stirred to combine into the hot soup.

Family Thoughts:

My family enjoys this soup as part of our Christmas Eve tradition. My husband often makes a LARGE batch of this soup in the fall and we divide it into meal size portions. We freeze it in our deep freezer.

  6. Hi there~ I'm stopping in from Let's Get Real today and I'm so glad that I did. This soup looks great. Because you mix it smooth, there is a good chance that my non-vegetable eating son might actually eat some vegetables. I'll let you know how that works out.
