Eggnog Muffins

My children LOVE muffins, so I am always on the lookout for a new muffin recipe to try. These muffins are festive, as they contain Eggnog and they are a delicious treat. My friend Shannon who sells Pampered Chef products shared this recipe with me and I cannot WAIT to try it out during the holidays.

Eggnog Muffins

3 cups flour
1 tsp baking soda
½ tsp salt
¼ cup sugar
½ tsp cinnamon
4 bananas
1 cup eggnog
½ cup applesauce (unsweetened)
1 egg
¼ cup agave syrup

1. Mix together flour, baking soda, salt, sugar and cinnamon in a bowl
2. Blend bananas and eggnog in a blender until smooth.
3. Whisk the egg, add to the banana mixture, applesauce and agave syrup until well blended.
4. Add the liquid ingredients to the dry ingredients and mix well.
Bake 350 degrees for 25 min.

I absolutely LOVE to make my muffins in my Pampered Chef stoneware Muffin Pan. I don't need to use paper liners, nor do I need to grease the stoneware as it is well seasoned. After cooling, the muffins pop right out of the pan with ease!
