Tuesday Tip: Pre-cook ground beef

I always buy a club pack or Costco size ground beef and cook up the whole thing to use for dinners through-out the next couple weeks.  Store the cooked ground beef in separate freezer bags so you can pull one out at a time for spaghetti, tacos, chili, nacho night and more.

Cheese and Crackers with @CookWithCutco

Right now, my son's absolutely FAVOURITE after school snack is melted cheese! Just that, the cheese, cut and melted in the microwave. Every once in a while, he will ask for it on crackers, but usually it is just the cheese.
I have been searching for a good quality Cheese Knife for quite some time and I am happy to share that I have finally found one.

This knife slides right through all kinds of cheese! I have tested it out on soft and hard cheeses and I am happy with how it performs on both.

I visited a Cutco booth at the Delicious Show back in the late fall and was very impressed with their live demonstration. Truth be told, I had seen them at a smaller local show a number of years ago, but I was skeptical, but after having the opportunity to try them out for myself, I am excited to share that these knives are what they say they are!

Pretzel Bites

If you haven't seen this recipe before, you'll be shocked to find out how simple it is to make pretzel bites at home - perfect to dip at parties, an afternoon snack, or even a dessert when tossed with cinnamon and sugar, check it out..

Recipe - Pretzel Bites

Ingredients
  • 1 loaf of frozen bread dough, defrosted
  • 1/4C butter melted
  • seasoning - salt, cinnamon and sugar, tex-mex spices, garlic and parm - the possibilities are endless

Step 1

Cut slices from the defrosted bread dough, then cut into 4ths - I lay them out on a piece of parchment so they are not touching each other since they are sticky

Step 2
Drop 6 or 7 pieces at a time into a pot of boiling water for about 45 seconds, drain on paper towel

Step 3
Place all the boiled pieces on a piece of parchment paper on a cookie sheet and Bake at 375 for about 25 minutes until the bites are starting to turn a golden brown

Step 4
Remove from oven, use a silicone pastry brush to cover with melted better and top with your seasoning - if using salt it's nice to use thick kosher or sea salt

Quick Way to Get Flavourful Rice

A quick and easy way to jazz up some rice is to add beef or chicken bouillon powder to the water. Here's the recipe I use on an average night..

Recipe - Flavourful Rice

Ingredients 
  • 2C minute rice
  • 2C water
  • 2 pkg beef bouillon powder
  • 1T margarine

Microwave
Mix all ingredients in a microwave steamer, cook for approx. 6-8 minutes

Stove Top
Bring water, beef bouillon and margarine to a boil, remove from heat, add rice and cover

Family Thoughts 


We really love the rice this way, especially along side plainer dishes like fish.  One of my guys hates the taste of plain rice but LOVES it when we add the beef bouillon.  Adds a noticeable difference that easily kicks your dish up a notch.

Cheddar Potato Soup

Growing up, I never used to like potato soup. It could be because it was often served in a chowder form, but regardless of the reason, I laugh now because when my hubby first made this soup, I told him that I wouldn't like it, but I would obviously give his a try. It smelled SO good as he made it and when he served it that night for dinner, I was honestly suprirsed with how good it was. Am I ever glad I tried his version! This soup is now my favourite soup, it definitely falls under the category of one of my staple comfort foods.
