Gluten Free Chocolate Cake

Last week, I stumbled across a recipe for Gluten Free Chocolate Cake. I was intrigued by the recipe, so I checked it out and discovered that the ingredient that made it "gluten free" was Quinoa.

I have to admit that I am not too keen on Quinoa, at least not the way I have prepared it in the past. I find that it has a very unique taste to it so when I learned that this cake had a base of Quinoa, I was very skeptical. I posted a comment and a few hours later, a blogger friend of mine had posted a reply stating that the Quinoa did not alter the taste. REALLY?! I just had to try the recipe out immediately! So, I baked a cake that afternoon and guess what lucky kids got to sample the cake as an after school snack? Yes, you guessed it, mine! Yes, I got the Mom of the Year award that day.

I shared half of the cake with my neighbour and her kids devoured it! So, the cake was a huge hit! You honestly cannot taste the Quinoa in the cake at all and it was light and fluffy and absolutely delicious.

Yesterday, I decided to make this cake for my daughter's birthday. It was also my Dad's birthday and he is a bit of a health nut, so I knew that he would LOVE the fact that the cake was made with Quinoa!

The key to this cake is to use a good blender!

My husband and daughter found an adorable Sophia the First character to put on the top of her cake. Once it was iced, I put a lid on the top of the cake and used transparent tape to secure Sophia to the lid. I didn't love how the buttercream smoothed onto the cake so I covered up my mistakes with Easter coloured M&Ms.

I love to bake, that is absolutely no secret! I have finally perfected a recipe for Cheater Red Lobster Cheddar Biscuits that I am excited to share with you today.

I'm not a fan of fish or seafood, so once in a while when my family heads to Red Lobster, the one part of the meal that I REALLY look forward to are the warm biscuits that arrive at the table.

These biscuits can accompany any meal and they also make an excellent snack. I enjoy them best fresh out of the oven or re-heated the next day.

These biscuits are the homemade version of the biscuits that are served at Red Lobster.

Prep time: 15 minutes
Cook time: 15 minutes
Yield: 12-15 biscuits

I love making pasta salad with Renée's Parmesan Caesar Vinaigrette.  Just cook your pasta, rinse with cold water, toss with Vinaigrette and store in the fridge for a few hours then serve.  My boys like it just like this, but you can kick it up with tons of mix-ins: cheese, red onions, cucumbers, peppers, ham cubes, egg slices; the possibilities are endless!

My next must try recipe I found on their site (the recipe ideas are to die for!)

Tangy Thai Meatballs

Ingredients

  • 1 bottle Renée's® Tangy Thai Sauce
  •  1 lb Lean ground turkey, chicken or beef
  •  1 Onion, small, finely chopped
  •  2 Eggs (or 4 egg whites)
  •  1/2 cup Dry bread crumbs
  •  To taste - Salt and pepper

Instructions

Preheat oven to 350°F.
In a saucepan simmer Renée's Tangy Thai Sauce until the vinegar evaporates (approx 10 min.).
In a large bowl mix the ground meat with the onions, eggs, bread crumbs and salt & pepper and form into 1-inch meatballs (makes approx. 70).
On two cookie trays with edges, place meat balls and cover with dressing.
Bake for approx. 20 - 25 min.

Serve over a bed of rice topped with any sauce that is left over or serve as an appy!
